Warm Beef & Watercress Salad

Ingredients

An easy lunch or supper dish that takes just 15 minutes. The
mustardy bite of
watercress is the perfect accompaniment to beef,
while added
chilli gives the salad an extra kick. 
 

FOR THE SALAD: 

  • 1 bunch watercress, torn
    into pieces
  • 1 small onion, thinly
    sliced
  • 1 tomato, thinly sliced
  • 2tbsp vegetable oil
  • 3 garlic cloves, chopped
  • 300g (10oz) beef sirloin,
    trimmed and thinly sliced
  • Pinch of salt
  • ½tsp cracked black pepper
  • 1 bird's eye chilli, sliced


FOR THE DRESSING: 

  • 2½tbsp white wine vinegar
  • 1tbsp vegetable oil 
  • 2tsp sugar

Method

  1. To make the vinaigrette dressing, place
    all the dressing
    ingredients in a bowl and stir well to
    dissolve the sugar. Put the
    watercress, onion and tomato in a
    mixing bowl, and dress the salad
    with the vinaigrette. Set
    aside. 
  2. Heat a wok over a medium heat, then add
    the oil and cook the
    garlic until fragrant. Increase the heat
    to high, then add the beef
    in 2 batches and stir-fry for 1-2
    minutes until browned. Season
    with salt and pepper. 
  3. Add the beef to the salad bowl, mix it
    all together well, then
    transfer to a serving plate and
    garnish with the sliced
    chilli.
