Not having room in my small store for a
devoted sharpening station, I turned a cookie sheet right into a
stowaway station that tucks underneath a wall cupboard or on the
underside of a shelf. The secret’s two grooved blocks. I connected
them by driving screws up via them and into the cupboard. You
additionally may grasp the blocks by screwing down into them from above.
I put one rubber shelf liner on the sheet to maintain the stones from
sliding round in use, plus my three grades of waterstones, my
stone holder, and a diamond plate. I stow a second piece of shelf
liner above the stones. It goes underneath the tray once I put it down
on the countertop. Once I’m accomplished sharpening and honing, I throw
the additional piece of shelf liner on high of the stones, slide the
tray into the grooved helps, and the counter is obvious. —JON
